Brief description:
Establishment of a cross-stage and scalable value creation concept for unweaned calves from dairy cattle farming by developing an offer for the end consumer of regionally and animal-friendly produced beef, considering the entire value chain.
Objective: A higher added value for calves and feeders from Baden-Württemberg and thus an incentive to raise calves in the country → By achieving a higher price for the end product (beef) → By the development and establishment of a value creation concept that can be expected to increase the end consumer's willingness to pay for regionality, animal welfare, meat quality, and authenticity.
Implementation: Through a dialog between milk producers (calf producers), fattening farms, marketers, slaughterhouses, and food retailers to address and solve problems and issues that arise during the establishment of the value creation concept. A communication channel must be established from the processor to the fattening farm and back to the dairy farm, which ultimately brings a product onto the market that can meet all consumer requirements. Informing and educating consumers about the relationship between dairy products and the birth of male calves that have no sale value is expected to increase consumers’ willingness to pay for beef from dairy calves.
