The aim of this project is to establish a scalable added value concept for dairy calves that can not be sold on the market by developing ways to offer consumers local and animal-friendly produced beef from Baden-Württemberg. The idea is to increase farmers’ motivation to keep their dairy calves to produce meat that can be sold locally avoiding e.g. out of country transport. Informing and educating consumers about the relationship between dairy products and the birth of male calves that have no sale value is expected to increase consumers’ willingness to pay for beef from dairy calves. This project involves all stakeholders from dairy and fattening farms, dairy factories, slaughterhouses to food retailers.
